~~Just a simple version of a very traditional southern side...especially for fried fish. Ingredients:
1 1/2 cups cornmeal |
1/2 cups flour |
2t baking powder |
1t cayenne(or less, to taste) |
1/2t salt |
1/2t fresh ground pepper |
2t fresh parsley, chopped |
1 small or 1/2 large onion, grated |
3/4 cup buttermilk |
1t bacon grease(melted, but not hot) |
1 egg, slightly beaten |
peanut oil for frying |
Directions:
1. Combine dry ingredients, other than parsley. Set aside 2. Add beaten egg to buttermilk, then add bacon grease and parsley and stir to combine. 3. Add wet ingredients to dry and mix just til combined. DO NOT OVER MIX 4. Let rest about 10 minutes while oil is preheating. 5. Drop by large spoonful into 350 oil and fry until golden brown. Hush puppies should flip on their own when one side is done. :) |
