Not Your Usual Chicken Salad |

I got this recipe on a message board after I said I was looking for a chicken salad recipe with grapes. It's a favorite of my husband and I. It tastes better the longer you chill it. Ingredients:
about 2-3 c. cooked, diced chicken (i usually buy the flash frozen chicken tenders at wal-mart and then grill them on my george foreman grill, let them cool and dice them) |
about 1 c. rinsed, halved seedless grapes (i think red look nicer, but i'll buy whatever is seedless and on sale) |
1/2 c. chopped celery (my husband hates celery so i usually omit this) |
1/2 c. chopped walnuts (the actual recipe probably calls for less, but i say you can never have enough nuts) |
1 c. ranch dressing |
1 tbsp. spicy brown mustard |
Directions:
1. Combine chicken, grapes, celery and walnuts. 2. Combine dressing and mustard in a separate bowl, then pour over chicken mixture. 3. The trick is to prepare this about 3 hours before eating, and then put it in the refrigerator to cool. The hours of cooling take away most of the punch of the mustard and the resulting taste is divine. |
