Not Your Regular Turkey Sandwich |

Trying to use up some fresh cilantro and a cucumber in my refrigerator and wanting to come up with a different kind of sandwich to bring to the pool with us, I adapted the Southwestern Club Sandwich to fit the ingredients I had on hand. I used half of a dried jalapeno since I didn't have any fresh. The hint of spiciness was just perfect mixed with the cilantro. It was delicious! Ingredients:
4 tablespoons mayonnaise |
2 tablespoons fresh cilantro, chopped |
1 garlic clove, chopped |
1/2 dried jalapeno pepper, chopped |
1/2 teaspoon ground cumin |
6 turkey slices |
4 slices whole wheat bread |
2 slices tomatoes |
1/2 cucumber |
1 dash salt and pepper |
2 leaves romaine lettuce |
Directions:
1. Mix together the first 5 ingredients and set aside. 2. Toast the bread. 3. Peel and slice cucumber. 4. Salt and pepper the sliced tomato and cucumber slices. 5. Spread the mayonnaise mixture on both slices of bread. 6. Layer with cucumber, tomato, turkey and romaine. 7. Top with remaining bread slice to make 2 sandwiches. |
