Not Your Grandmas Pea Salad |

This is a real easy, pea salad that has just a bit of a twist to it. This goes over really well at potlucks, and I make it often fot the local senoir center lunches. You can use any type of cheese, i often use cheddar or colby jack. Ingredients:
1 lb frozen green pea, thawed |
1 small red onion, chopped |
1/4 cup green pepper, chopped |
1 (2 ounce) jar pimientos, drained |
2 hard-boiled eggs, chopped |
2 tablespoons celery, finely choped |
2 tablespoons sweet pickle relish |
1/2 cup baby shrimp, cooked and cooled |
1/2 cup shredded cheese |
1/2 cup ranch salad dressing |
1/2 cup mayonnaise |
1 teaspoon dried dill weed |
1 dash salt |
1 dash pepper |
Directions:
1. Mix all ingredients. chill for two hours. |
