Not Your Everyday Tuna Salad |

I made this salad up inspired by chunky style salad I tried once in an upscale deli. It works great on a pita, sourdough, or pumpernickel bread Ingredients:
2 small cans of chunky style tuna in water |
3 large eggs |
1 small or 1/2 large yellow onion |
2 very full tbsp sweet relish |
1 small granny smith apple |
3 tbsp dried cranberries |
3 tbsp mayonnaise |
1 tbsp spicy or brown mustard |
salt, pepper to taste |
1 tbsp lemon juice |
1 tsp parsley flakes |
1/4 tsp paprika |
Directions:
1. Boil eggs for 10 minutes; cool, peel, and dice 2. Drain the tuna water 3. Toss tuna into a mixing bowl and break it down with a wooden spoon a little bit, creating large chunks 4. Peel and core the apple, and grate it on a coarse grater; add to the bowl 5. Finely chop the onion; add to the bowl 6. Add the remaining ingredients and gently mix, taking care not to mash them 7. Let it stand for 10-15 minutes in the fridge. 8. Serve with fresh bread or on a leaf of lettuce |
