From Outpost Natural Foods. This can be gluten free and dairy free if you use gluten free oats and margarine. My DD who can't have wheat or dairy loved these. I doubled it and they were a bit crumbly, but maybe they stay together better in an 8x8 pan as the recipe uses. Ingredients:
2 cups rolled oats |
1/2 cup raw sunflower seeds |
1 cup sliced almonds (or your favorite chopped nut) |
1/2 cup honey |
1/4 cup packed dark brown sugar or 1/4 cup sucanat |
2 tablespoons earth balance margarine or 2 tablespoons butter |
2 teaspoons vanilla or 2 teaspoons almond extract |
1/2 teaspoon salt |
1/2 cup flax seed meal |
6 ounces chopped dried fruit |
Directions:
1. Preheat oven to 350° F and butter an 8x8 or 9x9 inch glass baking dish. 2. Spread oats, sunflower seeds and almonds on a cookie sheet to toast in oven for 15 minutes, stirring occasionally. 3. Combine honey, brown sugar, butter or margarine, vanilla or almond extract and salt in a medium saucepan over medium heat. Cook until brown sugar has dissolved. 4. When oat mixture is done, remove form oven and reduce heat to 300°F Add oat mixture to liquid mixture, add flax meal and dried fruit and stir to combine. 5. Put mixture in the buttered baking dish and press to evenly distribute. 6. Bake for 25 minutes. Remove from oven and allow to cool before cutting into squares. 7. Store in airtight container for 1 week. |
