Not Your Average Banana Pancake

These pancakes are something that I made up when I got tired of fixing just plain old pancakes for my husband. I couldn't believe it, he actually liked them and so did my 18 month old son! Since then I've made them for some of my friends and my in-laws. I have never gotten one complaint, even though they come out a little deformed looking : ) I'm not joking, my friends would get so excited over these pancakes that they'd demand me to make them whenever I came to visit! Hopefully you will like them as much as we all do. By the way, no one even has to know that these pancakes are not the fattening kind! I've made them with real sugar and butter or oil before and my husband actually admitted to liking the lower fat pancakes better! You tell me what you think!
Ingredients:
2 cups bisquick reduced-fat baking mix (on the box for the pancake mix it says it makes 14 pancakes, but i make them big, so it usually come)
1 cup skim milk
1 egg
2 (1 g) packets sweet 'n low (2-3 packets or to your taste)
1 dash vanilla extract
1 dash ground cinnamon
2 bananas, sliced up into semi thin circles
Directions:
1. Mix together the first five ingredients.
2. Spray a skillet (I use a griddle) with cooking spray and put it on a med.
3. setting (or med.-hi setting, you be the judge.) Pour the batter and just when it starts to bubble start putting on a few banana slices, however many you like.
4. (At this point the pancake will take on a funky shape due to the weight of the bananas. But remember: It's the taste that matters the most!) Carefully (and this is slightly difficult) flip the pancake and let it cook until you can see that it's done.
5. Put a little butter on top and syrup and you've got one heck of a pancake!
6. (I use fat-free butter spray and sugar-free syrup).
