Not So Sweet Sweet Potatoe Casserole |

This is always a huge hit at the holidays! no more sweet potato swimming in syrup. This is slightly sweet, smooth and compliments meat very well. Ingredients:
6 medium sweet potatoes |
1/2 cup of sugar |
2 eggs |
1 teaspoon vanilla |
1/3 cup milk |
1/2 cup butter |

2/3 cup packed brown sugar |
2/3 cup chopped pecans |
4 tablespoons flour |
4 tablespoons butter |
Directions:
1. Peel, cube and cook potatoes in boiling water until tender (45 to 60 minutes). The smaller they are the faster they cook. Mash the potatoes, then combine sugar, eggs, vanilla, milk and butter and beat with electric mixer until smooth. Spoon into lightly greased 2. 12 x 8 x 2-inch baking dish.
