Hominy is comfort food! Hominy is humble. This recipe, a blend of sour cream, Monterey Jack cheese, and a few other ingredients, is waiting to be discovered. Humble hominy becomes sophiscated with an explosion of flavors! Read more ! And is it ever good! Ingredients:
2 cans yellow hominy |
2 cans white hominy |
4 tablespoons unsalted butter |
black pepper |
1/2 cup fresh salsa or your favorite salsa |
1 can green chilies |
1-1/2 cups sour cream |
2 cups grated monterey jack cheese |
note: may add fresh garlic, cilantro, 1/2 teaspoon cumin. or chopped jalapeno pepper. this dish lends itself to creativity, so be creative |
Directions:
1. Drain all cans hominy 2. In skillet, over medium heat, melt butter 3. Add drained hominy, stirring around, until visibly sizzling and sizzle for a minute or so 4. Sprinkle generously with black pepper or to your taste 5. Remove from heat and place in casserole dish 6. Add green chilies 7. Dot with salsa 8. May add garlic, cilantro, and/or cumin at this point 9. Spoon sour cream evenly over the hominy 10. Sprinkle grated Monterey Jack cheese over all 11. Place in 350 degree oven for about 25 minutes or until cheese is melted and slightly browned. 12. DELICIOUS and ENJOY! |
