Not-quite-so-dirty Red Rice

This rice is a meal in itself, and does without the chicken livers and gizzards of Dirty Rice. This rice uses ham and bacon (try to get bacon that's not too salty). A real tasty side dish that you can spice up with some bottled sot sauce if you like.
Ingredients:
1/4 pound slab bacon, diced 1/4
1/3 baked ham, diced 1/4
1 medium sweet onion, diced 1/4
1 red bell pepper, diced 1/4
2 cups uncooked long-grain rice
1/2 tsp. old bay seasoning
1 can (14 oz.) plum tomatoes, chopped (with juices)
4 small/medium tomatoes, diced 1/2
1 tsp. sugar
4 cups chicken broth
Directions:
1. Place bacon in a pot and cook until fat is rendered and bacon is slightly crisp.
2. Remove bacon from pot with a slotted spoon and set aside.
3. Discard all but 2 Tbl. of the bacon grease.
4. Add onion and pepper to the grease and cook over low heat, stirring, for 10 minutes or until wilted.
5. Add the rice and cook stirring for 2 minutes.
6. Add the ham, reserved bacon and Old Bay Seasoning.
7. Add all tomatoes, sugar and chicken broth.
8. Bring to a boil, reduce heat to medium-low, cover and simmer gently for 20 minutes or until most of the liquid has been absorbed and the rice is tender (stir a couple of times while it's cooking).
9. Serve hot.
