I didn't have any kim chi in the kitchen, so this was the next closest thing I could come up with. It's a good way to make use of leftover grains, and to make one egg fill you up. Ingredients:
1 egg |
leftover rice |
sauerkraut |
hot pepper flakes |
oil (i used canola) |
Directions:
1. Heat a small frying pan. Add the oil. Heat until warm, then add the cold leftover rice and stir-fry until fragrant and hot. 2. Add sauerkraut in about the same proportion as the rice. Stir into the rice and cook until hot. 3. Add the hot pepper flakes - I sprinkled them over the top until they looked right - and stir into the rice and sauerkraut mixture. Mix. 4. Make a well in the middle of the pan, and crack the egg in. Cook until the white is done on the bottom. With a spatula, flip the egg (and some but not all of the rice mixture) and cook the other side of the egg. I was after over easy . 5. When the egg is done to your liking, slide the whole thing out onto a plate and eat. |
