Not Exactly Italian Sausages with Peppers |

The way most people make Italian sausage and peppers is to smother the sausage in lots of sautéed peppers. It's good, but I expand on the theme with plump, juicy tomatoes and a big handful of basil. And turkey sausage adds a healthy twist to this traditional dish. Try it spooned over pasta for a truly Italian experience. Ingredients:
2 tablespoons olive oil |
1 1/2 pounds italian-style turkey sausages, cut on an angle into 2- to 3-inch lengths |
2 medium red onions, cut into 3/4-inch dice |
2 large red bell peppers, cored, seeded, and cut into 3/4-inch dice |
6 garlic cloves, thinly sliced |
7 ripe plum tomatoes, cut into 3/4-inch dice |
1/4 cup coarsely chopped fresh basil |
1 teaspoon dried oregano |
kosher salt and freshly ground black pepper to taste |
Directions:
1. 1. Heat the oil in a large skillet over medium-high heat. Add the sausages and cook, stirring occasionally, until they are lightly browned, about 3 minutes. 2. 2. Add the onions, bell peppers, and garlic. Cook, stirring often, until the vegetables soften, about 6 minutes. Add the tomatoes, basil, and oregano.
