This is a simple and delicious recipe for mock chopped liver. It makes a great meatless appetizer. Serve scooped on a bed of lettuce with a cherry tomato and some flatbread-voila! I always keep some cans of green beans on hand along with a bag of walnut pieces in the freezer, and I'm always ready to whip this up. Ingredients:
1 (14 1/2-15 ounce) can green beans, drained |
1 large onion, diced |
1 cup walnut pieces |
4 hard-boiled eggs |
salt and pepper |
Directions:
1. In a nonstick pan sprayed with cooking spray, saute onions slowly till a nice dark brown. 2. Put walnuts in the bowl of a food processor and pulse a few times to chop. 3. Add beans, eggs and onion and process till combined. 4. Scrape down sides and process till almost smooth ( a little texture is ok.),. 5. Add salt and pepper to taste. 6. Empty into a bowl, cover and refrigerate a few hours or overnight to combine flavors. |
