She wasn't imaginative in names but she was creative with the little food stuffs war time provided. Read more . We always eat this with a fried pork chops, these are popular potatoes in our house. We easily double this for more family.
Ingredients:
1 lb. of potatoes, peeled and diced.
2 tablespoons of butter
1/4 cup of minced onion
tablespoons of tomato paste
1 tablespoon of yellow mustard
2 tiny gherkins (tiny sour pickles)
2 tablespoons of heavy cream
Directions:
1. Cook the potatoes in salted water until just fork tender. Drain.
2. Melt butter in skillet, add drained and dried potatoes. Toss.
3. Add the onion and cook lightly until all is toasty brown.
4. Add tomato paste, mustard and gherkins with the cream.
5. Simmer five minutes and serve.
