This old fashioned pea salad has my twist on things! I know lots of people who do not like peas who absolutely love this salad. Give it a try! Ingredients:
2 lbs. petite frozen peas, rinsed under hot water to defrost |
1/3 cup chopped sweet pickle |
1/2 cup chopped red pepper |
1 cup chopped celery |
4 hard boiled eggs, chopped |
1/4 lb. bacon, fried crisp and crumbled |
1/4 cup finely chopped red or white sweet onion |
1 cup cubed american or cheddar cheese |
1 cup mayonnaise |
1/2 cup sour cream |
2 tbsp. sugar |
1 tbsp. apple cider or white vinegar |
salt and pepper to taste |
Directions:
1. In a large salad bowl, combine the first 8 ingredients. 2. In a smaller bowl combine mayonnaise, sour cream, sugar, vinegar, salt and pepper. Whisk well to combine. 3. Pour over salad ingredients and toss gently. Refrigerate 1 hour before serving. |
