Northwest Bounty Bruschetta |

Recipe from Sunset Magazine, November 2008. By Margee Berry Ingredients:
1 (8 ounce) sourdough baguettes, sliced 1/4-inch thick |
3 tablespoons olive oil |
1/3 cup onion, chopped |
1 cup granny smith apple, peeled and chopped |
1 teaspoon maple syrup |
1/4 cup dried cherries |
1 1/2 teaspoons horseradish |
2/3 cup blue cheese, crumbled |
1/3 cup hazelnuts, chopped |
Directions:
1. Brush bread with 2 T oil and broil until golden, turning once, about 5 minutes. 2. In a frying pan over medium heat, saute onion with remaining oil until golden. Add apple and syrup, cook 5 minutes. Let cool slightly. Stir in cherries, horseradish, and cheese. Spoon over toast and top with nuts. |
