Northern Thai Curry Noodle Soup |

Curry soup to be served over rice noodles. Add tofu or shimp plus other vegetables as desired. Ingredients:
1 tablespoon vegetable oil |
1 small onion |
2 tablespoons garlic |
4 cups vegetable broth |
14 oz coconut milk |
1 tablespoon fish sauce |
1 tablespoon soy sauce |
1 tablespoon sugar |
2 tablespoons curry powder |
2 tablespoons lime juice |
1/2 teaspoon salt |
1/4 cup coriander leaves |
Directions:
1. Cook noodles and drain. Chop garlic and onion. Saute in oil in soup pot for 3 minutes. Stir in broth and coconut milk, turn the heat down low. Cover and simmer for 10 minutes. Add seasonings. Pour over noodles and top with cilantro. |
