Northern Pike in Wine Sauce |

From Jean Power. Adapted from Fish Cookery of North America. Ingredients:
1/2 cup flour |
salt |
pepper |
4 lbs pike fillets |
3 tablespoons vegetable oil |
3/4 cup onion, chopped |
1/2 cup tomato, peeled and chopped |
1/2 cup dry white wine |
1/2 cup sliced mushrooms |
2 tablespoons parsley, chopped |
Directions:
1. Season flour with salt and pepper. 2. Roll fish in seasoned flour. 3. Heat oil in a large skillet. 4. Saute fish and onion until browned on both sides, 4-5 minutes per side. 5. Remove fish and keep warm. Leave the onions in the pan. 6. Add tomatoes and wine to the onions. 7. Cook about 5 minutes. 8. Add mushrooms and parsley and cook until heated through, 1-2 minutes. 9. Pour sauce over the fish. 10. Garnish with more parsley, if desired. |
