This recipe is from the tv show Northern Exposure Cookbook. It is a tasty moist meatloaf that get's rave review's. Putting it here for safekeeping. Ingredients:
1 large egg |
1 teaspoon salt |
1/4 teaspoon black pepper |
1/2 teaspoon dried thyme |
2 tablespoons dijon mustard |
1 cup milk |
1/2 cup chopped celery |
1/2 cup chopped onion |
1/4 cup catsup |
2 tablespoons catsup |
1 1/2 lbs ground chuck |
1 1/2 cups soft breadcrumbs |
3 slices uncooked bacon |
Directions:
1. Preheat oven to 350°F. 2. Beat egg lightly in large bowl. Add salt, pepper, thyme, mustard, milk, celery, onion and 1/4 cup catsup. 3. Add chuck and bread crumbs and mix well until thoroughly combined. 4. Transfer mixture to 9 1/4-inch loaf pan. 5. Spread remaining catsup over loaf and top with bacon strips. 6. Bake for 1 hour. 7. Remove from oven and let set for 10 minutes before slicing. |
