Northern China Steamed Egg Custard |

Ingredients:
1 tablespoon oil |
1/2 cup ground beef or 1/2 cup pork, tightly packed |
3 tablespoons chopped scallions |
2 teaspoons soy sauce |
4 eggs, beaten |
1 1/2 cups clear broth |
Directions:
1. Heat the oil in a small skillet. Add the meat, scallions and soy sauce and stir-fry for 2 minutes. 2. Whisk the eggs and broth together. 3. Place the meat mixture into a microwave safe bowl. Pour the egg/broth over the meat mixture. 4. Cover and microwave on high for 5 minutes. If not firm, microwave for additional 30 seconds. |
