Quick tasty main meal, lunch or side. Ingredients:
2 cups fresh tomatoes, seeded & coarsely chopped |
1/3 cup red onion, thinly sliced & chopped |
1 (4 1/2 ounce) can green chilies, chopped |
1/2 cup canned corn, drained |
1/3 cup cilantro, chopped |
1/4 cup olive oil |
2 tablespoons fresh lime juice (or fresh lemon juice) |
1/4 teaspoon kosher salt |
1 lb bow tie pasta, cooked & drained |
Directions:
1. In a large serving bowl, combine tomatoes through salt. 2. Add freshly cooked, drained hot pasta to sauce bowl, stirring to coat. 3. Serve. |
