North Carolina Yam Muffins |

This recipe is from the *In Good Taste* cookbook....I have not made these muffins... Ingredients:
1 cup yams, mashed |
1 to 2 cups sugar |
1 cup oil |
4 eggs, beaten |
3 cups self rising flour |
1 cup raisins |
1 cup pecans, chopped |
Directions:
1. Combine yams, sugar, oil and eggs. 2. Add flour and blend until just moistened. 3. Fold in raisins and nuts. 4. Spoon batter into greased muffin tins. 5. Bake 15 to 20 minutes at 350 degrees. 6. Batter may be refrigerated and used as needed. 7. Makes 24 muffins. |
