North African Spiced Carrots |

Another trued and true delight that is a mainstay at my house. I cut this recipe out of a magazine about 3 months ago and have made it at least 3 times since then. We love this recipe. Goes great with grilled chicken or fish. Ingredients:
1 tablespoon extra-virgin olive oil |
4 cloves garlic minced |
2 teaspoons paprika |
1 teaspoon ground cumin |
1 teaspoon ground coriander |
3 cups sliced carrots |
1 cup water |
3 tablespoons lemon juice |
1/8 teaspoon salt |
1/4 cup chopped fresh parsley |
Directions:
1. Heat oil in a large nonstick skillet over medium heat. 2. Add garlic, paprika, cumin and coriander. 3. Cook stirring until fragrant but not browned. 4. Add carrots, water, lemon juice and salt. 5. Bring to a simmer. 6. Reduce heat to low then cover and cook until almost tender. 7. Uncover and simmer stirring often until carrots are just tender and the liquid is syrupy. 8. Stir in parsley. 9. Serve hot or at room temperature. |
