Nopalitos Con Huevos Breakfast Tacos |

A different way to serve scrambled eggs. Makes a lovely breakfast for two. Ingredients:
1/3 cup nopalitos |
6 large eggs |
1 tablespoon milk |
1/2 teaspoon kosher salt |
1/2 teaspoon black pepper |
2 tablespoons butter |
1 tablespoon canola oil |
1/2 cup onion, finely chopped |
2 garlic cloves, minced |
1/2 cup chopped tomato |
4 (6 inch) corn tortillas |
2 teaspoons cilantro, minced |
Directions:
1. Cook nopalitos in boiling water 10 minutes. Drain. 2. Combine eggs and next 4 ingredients stir well with a whisk. 3. Heat butter and oil in skillet over medium heat. 4. Add the onion and garlic and sauté 2 minutes or until tender. 5. Add the egg mixture, and cook until bottom begins to set, stirring gently to scramble. 6. Stir in the tomato and nopalitos, and cook 1 minute. 7. Wrap tortillas in foil and place in 325 degree oven for about 5 minutes. 8. Spoon about 1/2 cup egg mixture onto each tortilla. 9. Sprinkle evenly with minced cilantro, and fold in half. |
