a simple casserole dish Ingredients:
1 -2 lb pork tenderloin, cut into 1 inch cubes |
3 tablespoons oil |
2 cups chopped celery |
1 red sweet bell pepper, chopped |
1 green bell pepper, chopped |
1 onion, chopped |
1 (4 ounce) can sliced mushrooms |
1 (10 ounce) can condensed cream of mushroom & garlic soup |
1 (10 ounce) can cream of celery soup |
1/4 cup soy sauce |
1 (7 ounce) package elbow macaroni, cooked, drained |
2 cups chow mein noodles |
1 (10 ounce) can tomatoes and green chilies |
Directions:
1. In a skillet, brown pork in oil and cook on low heat for about 15 minutes, remove pork with slotted spoon to a side dish. 2. Saute celery, bell peppers, and onion in same skillet in remaining oil. 3. In a large bowl, combine pork, celery/onion mixture, mushrooms, tomatoes, and green chilies, soups, soysauce, and macaroni. 4. Spoon ingredients into one large 9x13 baking dish, and top with chow mein noodles. 5. Bake uncovered at 350 degrees for 50 minutes. |
