Noodles and Mushrooms in Poppy Seed Sauce |

This is a nice, rich pasta dish that works well with a basic meat and starch meal - I prefer this with beef. Ingredients:
2 onions, sliced |
1/2 lb mushroom, sliced |
2 garlic cloves |
2 tablespoons butter |
1/3 cup lemon juice |
3/4 teaspoon salt |
1/2 teaspoon pepper |
1 dash cayenne pepper |
3/4 lb pasta |
1/3 cup sour cream |
1/3 cup nonfat plain yogurt |
1 tablespoon lemon zest |
2 tablespoons poppy seeds |
Directions:
1. Melt butter and saute onions, mushrooms, and garlic. 2. Add juice, salt, pepper, and cayenne and bring to a simmer. 3. Cook noodles al dente. 4. Combine sour cream, yogurt, zest, and poppyseed. 5. Toss pasta, juice mixture, and sour cream mixture. |
