This is a great quick and easy soup to ward of the winter woes. Ingredients:
Directions:
1. 6 cloves of organic chopped garlic 2. 1 chopped organic onion 3. 4 stalks of organic celery chopped 4. 2 large organic carrots chopped 5. 1/2 red organic pepper chopped 6. (I chop it all in a food processor to save time) 7. 1tsp organic parsley 8. 1 tbs celtic sea salt 9. 1/2 tbp each of organic pepper, thyme, turmeric, rosemary, cayenne(optional). 10. Boil above in 6 cups of water and 2cups of chicken or vegetable stock & 1 tbs olive oil. 11. Boil bone-in skin-on chicken peices in 10 cups of water to make your own stock…Fish them out after an hour simmering and remove the bones & skin, shread the meat and place back into the soup. 12. Add 2 cups of your favorite noodles and 1 shredded cooked chicken breast (optional if you are veggie, use tofu if you like) 13. Simmer until noodles & veggies are soft. |
