From Mom's cookbook. Ingredients:
2 lbs wide egg noodles |
10 eggs, lightly beaten |
2 tablespoons cinnamon |
1/2 cup sugar |
2 tablespoons vanilla extract |
2 apples, peeled cored and grated |
1 apple, peeled cored and diced |
1 cup raisins |
2 tablespoons margarine or 2 tablespoons rendered chicken fat |
Directions:
1. Cook noodles according to package directions. Drain and rinse in cold water. 2. In a large bowl, combine eggs, cinnamon, sugar and vanilla. 3. Add noodles, apples and raisins. Mix well. Pour into 13x9x2 baking pan. Dot top with margarine or chicken fat. 4. Bake in preheated 350°F oven for 50-60 minutes. Serve hot or cold. |
