This was my grandmother's (Nonni) chicken soup recipe. Interestingly, this is not Italian but Pennsylvania Dutch! Nonni got it from a coworker and we all loved it so much that she always made it after that! Enjoy! Read more ! Ingredients:
chicken, chicken breast is to be preferred |
2-3 stalks of celery (with the sprigs) |
2 large carrots, cut into small slices |
2 large potatoes, cut into small chunks |
2 slices of onion, chopped finely |
1 bag bow tie noodles |
2 cups chicken broth |
parsley, a shake |
tumeric, optional - just a dash |
Directions:
1. Put the chicken in a pot with enough water to barely cover the chicken and boil 2. Meanwhile, add the sprig of celery leaves and 1/2 the onion 3. Cook until chicken is tender and falls apart. 4. Strain the broth, saving it and putting it back in the pot again. 5. Add 1 Cup Chicken Broth 6. Add the potatoes, carrots, and remaining onion 7. Bring to a boil and then cook for an additional five minutes while boiling 8. Add the noodles 9. Cook until the noodles are the desired tenderness 10. Add the remaining 1 cup Chicken Broth, since the noodles will soak up the broth 11. Make a gravy of flour and water and add to the soup. 12. Add the parsley, and then salt and pepper to taste. 13. Serve with bread slathered with butter. |
