Very simple and tasty way to get back on track after a late night night that will carry you though the day Ingredients:
1 tbsp olive oil |
4 eggs |
1 medium onion sliced thin |
1 medium tomato chopped |
salt |
pepper |
4 thick slices of friulano or fontina cheese |
thin mulitigrain toast |
Directions:
1. 1. In frying pan heat oil and sauté onions until translucent 2. 2. Add tomatoes and sauté until consistency breaks down (about 3-4 min) 3. 3 Evenly distribute onions and tomatoes. Add salt and pepper. 4. crack eggs in sunny-side up and cover and cook about 6 min or until yolks firm up. (At this point you are not frying the eggs but poaching them in tomato and onion extract) 5. 4. cover with Cheese slices and let sit for about a minute 6. 5.Cut portions out onto toast and serve. Spice it up if your favorite hot sauce if you like. |
