None Better Sausage Stuffed Onions

These are so good, I can't get enough of them. I served them often as a side dish with pork or chicken but also have eaten the leftovers as a main dish with a salad. Greatness. Enjoy
Ingredients:
8 medium white onions
1/4 cup butter
1/2 pound sausage
1-1/4 cups soft bread crumbs
1/3 cup light cream
1/4 cup chopped parsley
1/4 teaspoon thyme
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 cup beef stock
1/2 cup dry white wine
Directions:
1. Scoop out centers of peeled onions leaving 1/4 thick shell then chop centers to equal 1-1/2 cups.
2. Blanch cases for 5 minutes and turn upside down to drain.
3. Sauté chopped onion in 1/4 cup butter until lightly colored then add sausage.
4. Cook a few more minutes then stir in 1-1/4 cups bread crumbs which have been soaked in cream.
5. Simmer 5 minutes then add parsley, thyme, salt and pepper.
6. Fill shells with stuffing and put in a buttered shallow dish.
7. Pour stock and wine around them and bring to boil on top of stove.
8. Bake at 350 for 45 minutes basting several times then transfer onions to serving dish.
9. Reduce juices by half then pour over onions and sprinkle with additional chopped parsley.
