Non Smokin Bar-B-Que Sauce

I don't like smokey, overly sweet and overpowering Bar-B-Que sauces. The bacon drippings combined with a sweet-sour, spicy flavor enhances the taste of meat or poultry. Apply more sauce just before serving. This recipe originated from my 25 year old copy of Joy of Cooking . This is a double recipe which I double again and freeze in 2 cup containers.
Ingredients:
1/2 cup chopped onion
3 tablespoons bacon drippings
1 cup water
4 tablespoons white vinegar
2 tablespoons worcestershire sauce
1/2 cup lemon juice
1/4 cup brown sugar
2 cups bottled chili sauce
1 teaspoon salt
1 teaspoon paprika
2 teaspoons black pepper
2 teaspoons ground mustard
2 teaspoons chili powder
Directions:
1. In a 1 1/2- 2 qt sauce pan, sautee the onions in the bacon drippings until browned.
2. Add the remaining ingredients, bring to a boil, reduce the heat and simmer for 30 minutes.
