Found this wonderful seafood quiche recipe on published by Judy Walker, The Times-Picayune on February 18, 2010. My husband and I are joining another couple for a long weekend on Captiva Island and I wanted to have something a little special for brunch. Read more . This should do a nice bake-ahead dish for us. Ingredients:
1 pound boiled shrimp, peeled, coarsely chopped |
1/2 pound swiss cheese, grated |
1 3/4 cups heavy cream |
3 tablespoons flour |
3 eggs |
1 tsp emerils essence creole seasoning |
1 pie shell - prebaked |
Directions:
1. Preheat the oven to 375 degrees. Distribute the shrimp evenly on the bottom of the pastry. Arrange the cheese evenly over the shrimp. Combine the cream, flour, eggs, cayenne, black pepper and salt and mix well. Pour over the cheese and shrimp. Bake for about 35 to 40 minutes, or until a knife inserted in the center comes out clean. |
