Vegetarian Red Beans and Rice by a New Orleans native. Warning- this is a work in progress Ingredients:
1 lb dried red beans |
1 onion, finely chopped |
3 -4 celery ribs, and leaves finely chopped |
2 green bell peppers |
3 -4 garlic cloves, finely chopped |
1 tablespoon olive oil |
3 bay leaves |
1 teaspoon zatarain's seasoning or 1 teaspoon similar cajun seasoning |
tabasco sauce |
1 tablespoon worcestershire sauce |
liquid smoke (optional) |
vegetable stock or vegetables, better than bouillan |
Directions:
1. Soak beans overnight or bring to a boil 2 minutes, then cover and soak at least an hour. Chop all vegetables and saute very slowly until they begin to carmelize. Drain beans and rinse well. Combine beans and vegetables in crock pot. Cover with stock or water and BTB. Simmer in crock pot for a VERY long time.7 hours? |
