This will add some kick to your table, and can even be perched on the side of a bowl of gumbo! If you like some wow , you can't go wrong with this! Ingredients:
3 pounds red-skinned or other thin-skinned potatoes |
6 to 8 large hard-boiled eggs peeled and chopped |
1 bunch of green onions, chopped |
4 stalks of celery, chopped |
juice of 2 lemons |
1/2 cup chopped dill pickles, cornichon, or pickle relish |
1 cup of good mayonnaise |
2 tablespoons creole mustard |
1 tablespoon coarse salt |
2 teaspoons black pepper |
2 teaspoons cayenne pepper |
Directions:
1. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook uncovered for 15 to 20 minutes, or until tender. Drain, and bring the potatoes to room temperature. 2. When potatoes are cool enough to handle, cut into medium-size pieces and place in a large mixing bowl. 3. Add the remaining ingredients except salt, black and cayenne peppers, and mix together well. Season with the salt and black and cayenne peppers to taste. 4. Refrigerate until ready to serve. |
