I have always loved apple butter and was happy to find this recipe in one of my mom's old cooking light books that has crinkled pages from the flood when Noah built his ark. Well, that what she tells me! Ingredients:

4 large winsesap apples, peeled cored and cut into 8 wedges each |
1 cup unsweetened apple juice (i like to juice my own) |
1/2 cup firmly packed brown sugar |
1 tsp ground cinnamon |
1/4 tsp salt |
1/4 tsp ground cloves |
1/8 tsp ground allspice |
Directions:
1. Directions: 2. Combine apple wedges and juice in a large saucepan. 3. Bring to a boil. 4. Cover, reducwe heat and simmer 12 minutes or until wedges are tender, stirring occasionally 5. Drain,discarding liquid 6. Place in food processor and process 1 minute or until smooth. I use the knife blade. 7. Return to sauce pan 8. Add brown sugar and remaining ingredients stirring well. 9. Cook uncovered over medium heat 20 minutes or until mixture is very thick, stirring often. 10. Spoon into hot sterilized jars filling to 1/4 inch from top. 11. Wipe jar rim 12. Cover with metal lids and band at once. 13. Stores in fridge up to 3 weeks. |
