When you roast garlic it becomes really mellow, almost sweet. I love to mash it an rub it on bread and use it in pasta. Ingredients:
2 heads fresh garlic |
2 tablespoons olive oil |
Directions:
1. Preheat the oven to 375. 2. Don't peel the garlic and leave the head intact. 3. Cut about 1/4 inch off the top of each bulb. 4. Put the garlic bulbs on a sheet of aluminum foil and drizzle with the olive oil. 5. Wrap the foil around the garlic and seal to make a package. 6. Shake the package to distrubute the oil. 7. Place the foil package, seam side up in a baking dish. 8. Bake until the garlic cloves are soft, about 30 minutes. The clove should easily be pierced by a knife. 9. To use: squeeze garlic from the skins. 10. Store cloves in an airtight container in the fridge for up to 10 days. |
