Nice textured cookie for anyone watching their sugar intake. A refreshing change and a welcomed addition to my cookie exchange. You may use any nut of your choice. Half the time I make it with pecans and then again with black walnuts. Recipe yields approximately 2 1/2 dozen cookies. Note: Preparation time could be less for you...I work slowly. Ingredients:
2 cups all-purpose flour |
1/2 cup walnuts, chopped |
1/2 cup seedless raisin |
1/2 cup orange juice |
1/2 cup butter, softened |
2 teaspoons double-acting baking powder |
1 teaspoon fresh grated orange peel |
1/2 teaspoon salt |
1 egg, beaten |
1/2 teaspoon ground cinnamon |
Directions:
1. In a large bowl, stir together flour, walnuts, raisins, orange juice, butter, baking powder, orange peel, salt, cinnamon, and beaten egg until well blended. 2. Drop dough by teaspoon about 2 inches apart on a well greased cookie sheet. 3. Bake at 375 degrees for 20 minutes or until lightly browned. Remember all ovens are different. I usually check mine 3 minutes early. 4. With a spatula, remove cookies to wire racks to cool. 5. Store in a tight container. May freeze until needed. |
