No Knead Coffee Cake Loaf |

A no knead batter type of coffee cake loaf I'm sure you will enjoy with your coffee or tea time break. Hope you like my recipe! Ingredients:
sponge |
1 pkt active dry yeast |
1/4 cup warm water |
1 cup warm milk ( or buttermilk ) |
1 cup bread flour |
1 egg beaten |
1/2 cup margarine or other shortening softened |
1 cup sugar |
1 cup all purpose flour |
2 tsp baking powder |
1/4 tsp nutmeg |
1/4 tsp cinnamon |
1/4 tsp salt |
1 cup soft raisins |
icing |
1/2 cup powdered sugar |
f2 tbs. softened butter or margarine |
1/4 tsp vanilla or almond extract |
few tsp milk |
Directions:
1. Dissolve yeast in water till foamy. 2. Combine with warm milk, flour and mix until combined. 3. Cover and let stand in a warm place 1 hour. 4. Stir down with egg and margarine. 5. Combine dry ingredients and stir well into mixture. 6. Blend in raisins. 7. Mixture will be a thick batter. 8. Place in an greased and floured 9 x 5 loaf pan. 9. Bake in a preheated 350 oven 45 minutes or until golden and tested done ( toothpick in center will come out clean ). 10. Remove to rack to cool. 11. Cool in pan 5 minutes and carefully remove. 12. Blend icing ingredients smooth and drizzle over warm cake. 13. Serve warm or at room temperature. 14. Note: I often use buttermilk instead of regular milk in the recipe and the texture is softer and the loaf not as tall but still very delicious. |
