This is the recipe my mother always used to make risotto. It is a quick and easy method and eliminates standing over the pot and constantly having to stir it. But don't be fooled, even though it is faster to make it is not short of flavor! Read more ! Ingredients:
1 stick butter |
1 onion, finely chopped |
1 large can chicken broth |
1/2 cup dried porcini mushrooms, softened (can soften in water or more sherry) |
1/2 cup dry sherry |
2 cups arborio rice |
parmesan cheese, to taste |
Directions:
1. Saute onion in butter until golden. 2. Add soup and softened mushrooms. 3. Stir in sherry. 4. Cook for 25 minutes. 5. Pour in rice, cover and let stand until thickened. 6. Add Parmesan cheese and serve. |
