I got this recipe from the manager at work. Instead of frying the pork, this recipe calls for searing the pork in its own grease (only a very small amount of grease is required) and it's a much easier alternative. It is a bit on the sweet side so you may want to adjust accordingly. Ingredients:
5 lbs pork butt (shoulder) |
1/2 onion |
2 garlic cloves |
1 (12 ounce) can coke |
1 cup orange juice |
3 bay leaves |
salt |
pepper |
1/2-1 cup water |
Directions:
1. Trim the fat from the pork (reserve the fat). 2. Cube the pork. 3. Cook fat until it releases enough grease. Take out the fat. 4. Turn the stove to high and add pork to the grease. Cook until lightly seared outside. 5. Add all ingredients. Only add enough water to barely cover the top of the pork. Bring it to boil for 5 minutes. 6. Cover and lower the temperature to simmer. 7. Stir occasionally. Cook until all liquid has evaporated and the outside of the pork is caramelized. Pork should separate very easily at this point. 8. Serve with Mexican rice or make your favorite taco & burritos with it. |
