It sounded so interesting that I had to try it. I'm so glad I did. This was PERFECT. I can't believe it hardly has any liquid and NO EGGS. Read more . But it tasted GREAT. Nice and moist. and low fat too. Its a very thick, sticky batter, so I had to spread it into the loaf pan, but it cooked up beautifully. I added my photo's. Ingredients:
2/3 cup dark brown sugar |
1/3 cup corn oil |
2 cups all purpose flour |
2 tsp. baking powder |
1/4 tsp. baking soda |
1 tsp. cinnamon powder |
1 tsp. pure vanilla extract |
1 cup mashed over-ripe bananas |
Directions:
1. Whisk all dry ingredients together well. 2. In a seperate bowl, mix together the bananas, oil and extract. 3. Now combined the wet and dry ingredients and mix well. 4. Spread this batter into a greased loaf pan and bake in a preheated oven at 400* for 40-50 mintues or til center is cooked. 5. Let cool completely then slice and serve. |
