Ingredients:
1 (14 ounce) package extra firm tofu, pressed and crumbled
1/4 cup vegan mayonnaise
1/4 cup pickle, chopped
1/4 cup onion, grated
1/2 teaspoon garlic powder
1/2 teaspoon turmeric
1/4 teaspoon salt (to taste)
Directions:
1. place all ingredients in bowl and mash with a fork until well blended.
2. enjoy the way you would regular egg salad, minus the guilt.
