No-egg-havin Mustard Potato Salad |

This potato salad was designed to give hard-boiled egg-haters (like me) another option at the picnic table. I've been making it for years and I'm ALWAYS asked for the recipe and ALWAYS told that the eggs were not missed at all! Read more ! In short, it's perfect! Ingredients:
2-1/2 lb. waxy potatoes, cooked in salted water, drained well, peeled, and cubed |
1/2 cup chopped celery |
1/2 cup chopped red bell pepper |
1/2 cup sliced stuffed green olives |
1/2 cup chopped cucumber (deseeded) |
3/4 cup miracle whip |
1/4 cup hellman's mayo |
1/4 cup yellow mustard |
ground black pepper to taste |
seasoned salt to taste to taste |
dried dill weed to taste |
onion powder to taste |
fresh flat-leaf parsley, snipped, for garnish (or mix in, to taste, as i do) |
sweet hungarian paprika, for garnish |
Directions:
1. MIX potatoes, celery, red bell pepper, olives, and cucumber in large bowl; set aside. 2. BLEND remaining ingredients (except paprika) in small bowl. Add to potato mixture; mix lightly with spatula. 3. Sprinkle with paprika (and parsley if desired). 4. Cover. REFRIGERATE at least 1 hour before serving. |
