These coconut pies are perfect for picnics or cook outs! The recipe makes two pies! Enjoy one, and share one! Ingredients:
1 3/4 cup sugar |
1/2 cup self-rising flour |
4 eggs, well beaten |
1/2 stick butter, melted |
1 teaspoon real vanilla extract |
2 cups milk |
7 ounces coconut, fresh or frozen |
dash of nutmeg, if desired |
Directions:
1. Mix sugar and flour. 2. Add beaten eggs, then add remaining ingredients. 3. Pour into 2 greased 9-inch aluminum foil pie tins. 4. Bake at 350 degrees until brown on tops, about 35 minutes. |
