Cool and refreshing avocado bisque. Perfect for a hot summer day.From Everyday. Ingredients:
2 large avocados |
2 cups buttermilk |
4 scallions,green and white parts sliced seperately |
grated peel and juice of 1 lime |
16 ice cubes |
salt |
1 lb. tomatoes,coarsely chopped |
3 oz. feta cheese |
6 oz tortilla chips |
Directions:
1. Using blender,puree 1 avocado,buttermilk and scallion whites. Add the lime peel and three-quarters of the lime juice 2. With machine on low speed,blend in ice cubes 1 at a time,until smooth. Season with salt;refrigerate 3. Meanwhile,coarsely chop the remaining avocado and transfer to a medium bowl. Add the tomatoes,feta cheese,scallion greens and remaining lime juice 4. Divide the soup among 4 bowls. Top with avocado salad and tortilla chips. Serve with remaining tortilla chips on the side. |
