This is my version of a recipe that my boyfriend and I found in a Cooking for Less Cookbook. I altered it due to lacking some spices / ingredients and it turned out delicious! This recipe is a cheddar version of a pastitsio, because we prefer cheddar. It's a bit time consuming but worth it if you ask me! And my boyfriend ;) Ingredients:
1 lb ground beef |
1 cup mild picante sauce or 1 cup salsa |
1 1/2 cups pasta tomato sauce |
1 tablespoon sugar |
1 teaspoon allspice |
2 cups uncooked macaroni noodles |
3 tablespoons butter |
3 tablespoons all-purpose flour |
1 1/2 cups milk |
1/2 teaspoon salt |
1 pinch black pepper |
2 eggs, beaten |
1/2 cup cheddar cheese, grated |
Directions:
1. Preheat the over to 350 degrees. Spray whatever baking dish you will use. The recipe originally calls for a 9x9 square pan, but I used a spring form pan for a cake (really limited on supplies here) and it worked fine. 2. Brown beef in a large frying pan over medium heat, break up the chunks as you do this. Drain the fat. Add the picante sauce, pasta sauce, sugar, and allspice. Bring to a boil and then reduce the heat and simmer for 10 minutes, stirring often. 3. In the meantime, cook the pasta according to its packaging directions; drain. When finished, place in bottom of your pan. 4. For 'orange' sauce: Melt butter in medium saucepan over medium heat. Add the flour and mix until smooth. Add milk and cook & stir until it becomes a thick consistency. Remove from heat. Add 1/2 cup of the milk sauce to the eggs; stir to blend well. Add that to the remaining milk sauce in the pot. Stir in cheese until mostly melted. 5. Stir roughly 1/2 cup of the orange sauce into macaroni, coat completely. Spread meat sauce over macaroni layer. Top with remaining orange sauce. Sprinkle with a pinch of pepper. Bake, uncovered, 30 - 40 mintues, or until a knife inserted into the center comes out clean. Let stand 15 - 20 minutes before serving. |
