No Butter Sweet Potato Pie |

I saw this in an ad for Stonyfield Farm Organic Ingredients:
2 large cooked and peeled sweet potatoes |
1 cup brown sugar |
1 cup plain yogurt |
1/2 cup orange juice |
3 large eggs |
1 teaspoon vanilla extract |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
1 frozen or fresh pie shell |
Directions:
1. Preheat oven 400°F. 2. Blend skinned potatoes in food processor til smooth. 3. Mix in all other ingredients. 4. Pour into pie crust. 5. Bake approximately 50 minutes (until filling sets and puffs around edges). 6. Let cool. 7. Refrigerate 3 hours. 8. Top with toasted pecan and whip cream. |
