No Bake Pineapple Cheese Pie |

This is a light pie with a delicate taste. I have taken this to several church dinners and those who are watching their sugar enjoy the treat. This came out of a Light and Tasty Magazine. Because of the jello I think, it stands up nicely and makes a good presentation. Ingredients:
pastry for a 9 inch pie |
1 pkg. 3 oz sugar free lemon jello |
1/2 cup boiling water |
1 can 8 oz crushed pineapple |
1 pkg 8 oz. fat free cream cheese |
1 pkg 3 oz cream cheese |
1 carton 8 oz. whipped topping (reduced fat topping) |
Directions:
1. Prepare crust for 9 inch pie 2. In a small bowl. dissolve gelatin in boiling water. cool for 10 minutes. Stir in pineapple. In a large mixing bowl. beat cream cheeses until blended. Gradually beat in pineapple mixture. Fold in whipped topping. Spoon into pastry shell. Cover and refrigerate for 4 hr. or until set. Yield 8 servings. |
