This is from 1,000 Vegan Recipes with my own modifications Ingredients:
1 1/2 cups fiber one cereal, original |
1/4 cup earth balance margarine, melted |
1 lb tofu, extra firm, drained and pressed |
1/2 cup agave nectar |
1 teaspoon vanilla extract |
4 kiwi, peeled and thinly sliced |
1 pint blueberries |
1 quart strawberry |
1/4 cup peach preserves |
1/2 lemon, juiced |
olive oil flavored cooking spray |
Directions:
1. Spray a 9 pie plate w/ olive oil. 2. Combine cereal and margarine in food processor and pulse until the crumbs are moisten. Press the crumb mixture into the pie plate. Set aside in the refrigerator. 3. Mix tofu, agave nectar, and extract until smooth. Spread into the chilled pie crust and refrigerate for an hour. 4. Arrange the fruit decoratively on top of the tofu mixture. 5. Slowly heat the preserves and lemon juice until melted. Stir and drizzle over the fruit. Chill at least 1 hour to set glaze. |
